Tomato- Goat Cheese Bruschetta~ An Oscar Worthy Appetizer
Well, there are three days left, before Hollywood's biggest night; The Oscars! I'll be perfectly honest and tell you straight up that I haven't seen most, if any, of nominated movies. I'm hoping that will change with the help of General Mills Canada. For a limited time, they have included a code inside specially marked boxes, good for free movie offers. How could you pass up going to the movies, when you could save money doing it??
We did take Mr.B to see Puss in Boots and we all thought it was a really great movie, so I am rooting for that one. And of course being a HUGE Harry Potter Fan, I'm rooting for them in every category. As much as I love to watch the Oscars- especially the red carpet, to see what all the stars are wearing; it doesn't happen very often since the kids and Hubby could be less interested. I do catch the end, once the kids are in bed, but am often flipping back and forth, from one of my 'not to be missed' TV shows, LOL. In a perfect life, my husband would be as star struck as I am, we would don our finest clothes and invite our friends to watch the Oscars, while nibbling on party appetizers and sipping some fabulous wine. Alas, life could never be perfect, so I am content to serve yummy appetizers at family functions.
This past Monday was Mr.B's 7th Birthday and since Hubby was working on Monday, we had a pre Birthday celebration on Sunday. A few of our friends and family came over and I served up this wonderful bruschetta, which I found on the Life Made Delicious website. I simply LOVE goat cheese and olives, so I immediately gravitated to this recipe. These are really delightful and stunning. I love the red tomatoes and purple olives in contrast with the white goat cheese. The cheese is tart, while the tomatoes are sweet and the olives are salty. The thyme brings an earthy balance to it all, while the red pepper flakes bring an unexpected, yet subtle bit of heat. Our guests raved about these and once they had left, Hubby mentioned that he wished I had made a double batch, LOL.

Tomato-Goat Cheese Bruscheta
Adapted from Life Made Delicious
2 logs (4 oz/250 g each) soft goat cheese, cut into 8 (1-inch/2.5 cm) slices
1 can (14 oz/398 mL) diced tomatoes, drained
1/4 cup (50 mL) coarsely chopped pitted kalamata olives
1 tsp (5 mL) chopped fresh thyme leaves
1/4 tsp (1 mL) crushed red pepper flakes
1 tbsp (15 mL) olive oil
24 slices (1/2 inch/1.25 cm thick) baguette, toasted
Heat oven to 350ºF. In ungreased 1-quart shallow ovenproof gratin dish or 9-inch glass pie plate, place cheese in single layer.
Sprinkle tomatoes, olives, thyme leaves and pepper flakes over cheese. Drizzle with olive oil.
Bake 15 to 20 minutes or until warm. Serve with baguette slices.
